Bird Nest Mini Cheesecakes

Easter is only 6 days away, are you ready??

I hope you are using my Stress Free Easter Hosting Tips to get yourself ready for when your family shows up after church Sunday.

We will be off to my grandparents for the day. The weather is looking to be close to 50, which is fabulous for this time of year in Minnesota. I guess it is time to bust out my maxi dress collection for the season.

As promised I am back with my Easter Dessert Hack- Bird Nest Mini Cheesecake.

Not only did I love how these turned out, I was featured on 2 other blogs  {here & here} for the idea. I did a little happy dance when I saw my links in their post! Love seeing this little blog grow!

Let’s get started with those cutesy nests.  Assemble your cast of characters: Microwave safe glass bowl, butter, mini marshmallows, mini cadbury eggs, chow mein noodles and a mini muffin tin.

This will seem very reminiscent of making rice krisipy bars, because it basically is the same thing, sub the chow mein.

Butter and marshmallows in the bowl, and microwave.

Add in your noodles, and stir it all together.

In your buttered muffin pan, fill each cup with noodles.

Last you will add your eggs to the nest. Aren’t they darling?

Allow to harden for 10 minutes.  You can serve them just like this, they would be a cute snack for kids or treat for guests waiting for lunch.

Or you can keep going with me add add them to your cheesecake.

You will need one pre-made cheese cake. You can totally make your own cheesecake, and frozen it to be ready for this step. However, since this is a dessert hack, we are keeping things simple- store bought cheese cake.

You will cut your cheesecake into 8 squares. Leaving some nice slivers for you to nibble on while assembling.

Now its it time to assemble.  To make the cheesecakes easier to handle and add a pop of Spring color, I placed them on green muffin liners. Placing a square on each liner, and a nest on top of each square of cake. TADDA! Your dessert is ready to serve. Wasn’t that easy-peasy??

These little guys are sure to impress your guests and take a ton of time out of your prep.

Bonus: the next recipe makes 12-14 nests, but the cheesecake only makes 8 servings. This will leave you with 4-6 nests to nibble on {or give to the kids to keep them out of the kitchen} 🙂

 

Bird Nest Mini Cheesecakes

  • 1 1/4 cup mini marshmallows
  • 1 cup chow mein noodles
  • 2 tablespoons butter
  • Mini Cadbury Eggs
  • 1 pre-made New York cheesecake (frozen)
  1. In Microwave safe bowl, melt butter for 1 minute. Add in marshmallows and microwave 1 more minute.  Stir to fully combine. 
  2. Butter or spray with cooking spray, a mini muffin pan.  Portion out noodle marshmallow mixture between muffin tin holes. Create an indent in the center of each nest to create a nest appearance.
  3. Add Mini Cadbury Eggs to each nest. Allow to cool and harden
  4. Cut prepared frozen cheesecake into 8 square pieces.
  5. Place each cheesecake on top of a cupcake liner, and top with a nest.
  6. Serve and Enjoy!
