Black and Blue Steak Salad

The Boy couldn’t believe all the Ranch and Blue Cheese I put on this salad.

I wanted to add more.

You can’t go wrong with Ranch. Well, your waistline can go wrong with Ranch, but your taste buds can’t.

Do you ever eat meals at odd times?

We ate this dinner at roughly 10pm. After a long day, and having eaten breakfast, and lunch super late, we ended up being ready to eat dinner super late.

Saturday’s are notorious for weird eating times.  Breakfast at 11am, Lunch at 3pm or 4 pm and then dinner lands at 10pm.

I also do not advise going grocery shopping when you are hungry. You buy the whole store!

Steak, yes please.

::If you have not tried these, run to the store right now. Bring a spoon with you.  Once you pay, use that spoon and start eating, right there in the store::

Bananas, apples, peaches, pears, grapes, strawberries, broccoli, asparagus, ice cream, chips, salsa, and the list goes on: Yes- get in my cart!

Even if you know that you will need to eat 6 meals every day to eat all of the food in your cart before it spoils.

Going to the store hungry makes me go a little crazy.

 

That is when these delicious looking steaks and asparagus spears ended up on the menu at 10pm.

Honestly, the best flavor you can add to a steak is a generous amount of salt and black pepper. Then when you think you have enough black pepper, go back and crack a few more peppercorns on those bad boys.

Now they are ready for grilling.

Since it was 10pm, and it has rained almost every day around here, the indoor grill had to do the trick.

I love grilling asparagus.  My favorite is when the tops get crispy and crunchy.

Now, I could have stopped right here. Served this guys as Steak Asparagus Roll-Ups and called it a day, but I couldn’t.

You certainly can. I highly encourage it too.

Last week  I did exactly that for a dinner with friends. Perfect portions to serve potluck style and they cook up quicker than a normal steak.  I even watched people eat these like steak on a stick. Picking up the bottom of the spears, and gnawing away.

Or you can do what I did.

Place them on a bed of lettuce (to add the health factor), drown them in ranch (add the fat factor), mound with blue cheese (add the amazing factor) and top with more fresh black pepper.

Sigh.

Black and Blue Steak Salad

yields 4 servings

  • 8-10 thin slices of Rib Eye Steak
  • 1 bunch asparagus, trimmed (3-4 spears per steak )
  • Sea Salt
  • Fresh cracked Black Pepper
  • Roman Lettuce
  • Ranch Dressing
  • 1/4 cup blue cheese, crumbled
  1. In a large pot, add 1 cup water and 1/2 teaspoon salt. Bring to a boil, and add asparagus.  Cover, and turn off heat. Steam for 5-7 minutes (depending on thickness of our asparagus).  Removed from water immediately and cover with cold water to stop the cooking process.
  2. Wrap 3-4 cooled asparagus spears with 1 slice of steak. Secure with 1-2 toothpicks. Continue until all steak slices are used.
  3. Generously salt and pepper each steak roll-up.
  4. On a 350 degree grill, cook each steak roll-up for 4-5 minutes per side.  Continue cooking and turning until all sides are browned, and cooked through.  Remove toothpicks.
  5. Build 4 salads with a base of lettuce, then top with steak roll-ups, ranch, blue cheese and fresh cracked back pepper.
  6. Serve immediately.
