Chicken with Lemon Cilantro Yogurt Sauce

Have you ever had a sauce you wanted to eat by the gallon? Maybe even drink it through a straw?

If you have not, once you try this Lemon Cilantro Yogurt Sauce, you will.

We have had chicken more times in the last month than we have in the last six months, because I have been craving this sauce like crazy. It is perfect on top of chicken thighs {as mentioned in the recipe} or on a grilled, baked or fried chicken breast.  The nice bright lemon flavor mixed with the fresh flavor from all the herbs makes the sauce flavor packed, but light.

I recommend serving the chicken with brown rice.  Our house is a white rice house, and as much as we hear brown rice is much healthier for you, we have never been able to adapt to the taste and texture.  However, the nutty flavor of brown rice is perfect with this sauce.  You can even smother your rice in the sauce. I may or may not be speaking from experience here.

We also eat a ton of Roasted Broccoli with our meals.  I buy large bags of broccoli from Costco, and between The Hubby and I, we can eat a whole bag in less than a week. Roasted Broccoli is an easy healthy side dished. Add some seasoning, oil, then popping it into the oven, it couldn’t be easier.

Chicken with Lemon Cilantro Yogurt Sauce

  • 6 chicken thighs (boneless)
  • 3/4 cup plain greek yogurt
  • 1/4 cup hummus
  • 1 lemon (juice and zest)
  • 2 tablespoons buttermilk (or 2 % milk)
  • 3 garlic cloves (minced)
  • 1 tablespoons white sugar
  • 1 cup chopped cilantro (1 bunch)
  • 1 cup chopped flat parsley (1 bunch)
  1. In a medium bowl, mix together yogurt and hummus.
  2. Zest and juice one lemon, add to yogurt mixture.
  3. Stir in garlic, sugar, buttermilk, cilantro and parsley to yogurt mixture.
  4. Cover and chill sauce for a minimum of 1 hour to allow flavors to develop.
  5. In a cast iron pan or a non-stick sauce pan, add 1/4 cup vegetable oil. Bring to medium/high heat.
  6. Rinse chicken thighs, and completely pat dry. Season with salt and pepper.
  7. Place chicken skin side down in hot oil.
  8. Cook chicken 7-8 minutes on each side, until cooked through.
  9. Place chicken on paper towels to drain off excess oil.
  10. Serve chicken with lemon cilantro yogurt sauce and your favorite side dishes.

    I’ve never used yogurt in a savory recipe, but this looks so fresh and tasty! And I’m always a sucker for roasted broccoli, especially when it’s a little charred on the tips 😉
