Day 18: Peanut Butter Clusters

I had a baking partner tonight and she was wonderful!  My roommate watches my crazy baking and cooking activities. Puts up with my back up to my back up supply of sugar, flour and butter. And she also helps me out sometimes.  Tonight she helped me make these delicious little candies.  These are a staple in my family. They are easy to make. It however is easier for them to disappear!

These take 4 ingredients, a microwave and time too chill out in the refrigerator. Or the outside patio if you live in MN like me.  One of my favorite parts about baking in the winter in MN, if you need something to chill, just set it outside.  You have your own personal deep freeze at your disposal any time you need it.

Yes, we still don’t have snow on the ground in MN. I am very sad about this. My fingers are still crossed for a White Christmas 🙂

Peanut Butter Clusters

  • 1- 10 oz bag semi-sweet chocolate chips
  • 1- 10 oz bag butterscotch chips
  • 1 cup peanut butter
  • 2 cups Spanish peanuts + 1/2- 1 cup extra if needed
  1. Place mini paper candy cups on baking sheets, approximately 50. It is always better to have more prepared, than less.
  2. In large microwave safe glass bowl, combine chocolate chips, butterscotch chips and peanut butter.  Microwave for 3 minutes, stirring mixture every minute. Do not let mixture burn.
  3. Remove from microwave and stir constantly until all chips are melted, no lumps.  Add peanuts to chocolate mixture and stir until fully mixed.
  4. Spoon mixture into mini candy paper cups.  Mix in extra peanuts as needed when 3/4 of the way done to ensure all clusters have the same amount of peanuts.  Refrigerate to harden.
  5. Store in refrigerator in airtight container.
