Give Thanks & Happy Thanksgiving

Happy Thanksgiving!!

I hope you all are preparing your stretchy pants for what is my favorite food coma day of the year. I told you all about that the other day.   Last night I was preparing to spend Thanksgiving with my extended family at my grand parents.  My grandparents always host holidays at noon sharp at their house.  I normally try to arrive early to help my grandmother finish cooking, which means I prepare Wednesday night. I am always in charge of  dessert.  I am not sure why I ever call my grandma to ask what I should bring. She always responds with “dessert, and you know your grandpa needs to have his pumpkin pie”.  So that is what I did last night. Make pies.

Since pies are getting to be an old hat, I thought I would test out another recipe for the day.  I was inspired for these cookies from this pinterest post. Since I didn’t want to run to the store for peanut butter cups, I improvised by using my peanut butter blossom cookie recipe, and homemade frosting.  The home frosting isn’t needed, it was just the easiest for me. Again, I did not want to shop on the Eve of Thanksgiving, when grocery stores turn into a zoo of crazed last minute shoppers.  This also means you still have time to make these cookies! What a fun project for the afternoon with the kids while the turkey is roasting? Or after lunch when the rest of the family is either in a food coma napping or watching football.

2015 has been a really great year for me and my family. I have so much to be thankful for and will be thinking about it all day long.

I am thankful for love and celebrating our first year of marriage with The Hubby.  The age old saying is that the first year of marriage is the hardest.  I would have to disagree, our first year of marriage was our best year yet! We really grew as a couple, combined our lives like we hadn’t done before, and we truly fell into the security of spending the rest of our lives together. I truly am thankful for him in my life every day.

I am thankful for my family, and that they are happy and healthy.  My family means the world to me, and knowing that they are healthy and safe makes every day much easier.  I might not see all of my family as much as I would want to, I try to make the most out of the time I do get with them. Again, which is why today is my favorite holiday– quality family time.

I am thankful for my friends.  I have incredible friends, who make life so full.  Celebrating Friendsgiving with them last weekend was so wonderful. I love to feed people {obviously}, so having a day with friends to hang out, and eat makes me smile from ear to ear.

I am thankful for adventure.  The past year was filled with some really great trips to places for the first time. It also was filled with adventures into new projects.  The Hubby and I both look for ways to keep ourselves as active as possible, and try as many new things as we can. Something that makes him my perfect match. I am really hopefully that the next year brings even more adventure, of any kind!

I am thankful for so many more things; our dog, work, community, football, sports, good food, meeting new people, things that challenge me, new kitchen gadgets, etc. I look forward to dwelling on all these things and more today.

Happy Thanksgiving Everyone!

Oh, and I am Thankful for you all!

Rachel
