Monster Cookie Bars

My mom has me hooked on these Monster Cookie Bars.

She also has had to send me this recipe 10 times. I always seem to miss place the recipe when I write it down, or the text message she sent it in is too old that I can’t find it.  Good thing I am documenting it and sharing with you all. She basically said she will not send it to me anymore, because I can’t seem to keep track of it.

I love when you can make a cookie into a bar. The baking time is cut down drastically, leaving room for more house projects or some Netflix binge time.

Winter really does make me want to stay in and sleep, all the time!  Here in Minnesota, we get exactly 8 hours 46 minutes,  of day light from Mid- November to February. The sun comes up just as I am leaving for work, and goes down the minute I walk out of work. Or at least that is what it feels like.

Perpetually tired, that is how I feel all the time.

Do you get into a winter slump?

Lets talk more about Netflix binge nights, because that is how I survive winter.  Has anyone else still not watched the Gilmore Girls: A Year in the Life?

I know I am terribly behind the curve here, but I blame it on The Hubby.  He insisted on watching season 5-7 before we watched the new episodes.  You read that right, my husband is a HUGE Gilmore Girls fan.  The fast talking, smart whit of the characters sucks him in, just like the rest of us.  He may not be too happy that I just share this fact about him… but it is too good not to share!

We are so painfully close to finishing season 7.  Obviously I know how it ends, but The Hubby doesn’t. I don’t know who is more excited, me to see the new episodes, or him to see the end of the originals. All in all, the experience of watching the last 3 seasons over again was a great refresher. However, social media has basically told me everything that happens in the new episodes.  I hate being behind on shows, either someone slips and tells me, or my curious mind gets the best of me and I read one of those articles that say “SPOILER ALERT” at the top.  Slap my hand, shame on me.

Seriously, I feel like The Hubby and I are the only two people on the planet who have not watched “A Year in the Life”.

Looks like more Netflix time on the couch is in our future. Thank goodness for the winter darkness!

None of that has to do with Monster Cookie Bars. Well, maybe I should just make a pan to eat while watching Netflix. Sounds like a solid plan. I think you should follow that plan too.

Monster Cookie Bars

  • 1/2 cup butter (soft)
  • 1 1/2 cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 2 tsp. baking soda
  • 4 1/2 cup oats
  • 1 1/2 cup mini chocolate chips
  • 1 1/2 cup mini M & Ms
  1. Preheat oven to 350 degrees
  2. Cream together butter and sugars
  3. Add eggs, vanilla and peanut butter. Mix all ingredients well.
  4. Stir in baking soda and oats until fully combined.
  5. Gently stir in chocolate chips and M&Ms.
  6. Spread mixture into a lightly greased 10X15 pan.
  7. Bake for 25 minutes. Do not over cook.
  8. Allow to cool. Cut and serve.
