Thai Peanut Chicken Lettuce Wraps

The photos will never do these wraps justice. The Fiance called them “healthy bites of yumminess”.  I will take that review!

Last week we had these as a main dish, even though you could make these as an appetizer.  Maybe along with a homemade Shrimp and Pea Pods Stir Fry  or with another appetizer like Pork Eggrolls.  I even had to double the batch to feed 4 of us.

Not a single speck was left.

For some reason everyone loves the chili sauce that goes with these, but I personally love them without it. Me + Spice = Not Friends.

Sometimes I am offended when people add all kinds of hot sauce or spices to my cooking. It is such a let down.  You try to put all kinds of flavor into your food and someone squashes it with mouth numbing spice. However with this recipe, I brought the spice!

With our without it, these still are delicious!

You can also eat these with some romaine lettuce, if you want some nutritional value from your lettuce.   I personally prefer romaine because you can eat them like little boats of “healthy yumminess”.   Iceberg lettuce just looks so much prettier for presentation

Thai Peanut Chicken Lettuce Wraps

  • 1 lb ground chicken or ground turkey
  • 2 tablespoons peanut butter
  • 1 tablespoon white vinegar
  • 1 tablespoon oyster sauce
  • 2 teaspoons brown sugar
  • 2 teaspoons soy sauce
  • 1/2 cup water
  • 1/2 cup scallions (chopped)
  • 1 head iceberg lettuce or romaine lettuce leaves

Chili Dipping Sauce 

  • Juice of 2 limes
  • 1-2 teaspoon garlic chili sauce
  1. In large fry pan, brown chicken until fully cooked.  Add water, and stir in peanut butter, vinegar, brown sugar, oyster sauce, and soy sauce.
  2. On medium-high cook down until peanut sauce thickens, roughly 3-5 minutes. Just before serving stir in chopped scallions, but don’t continue cooking.
  3. In a small bowl stir together the juice of 2 limes and garlic chili sauce for dipping wraps. (This step can be done while cooking chicken)
  4. Serve with lettuce and chili dipping sauce.
