The Wonders of Rhubarb

It’s that time of year again, Spring is now Summer and everything is vibrant and lush. In the city it is hard to see these changes, but when we ventured out into the country on the Memorial Day weekend, I encountered one of my favorite sites of early Summer- Rhubarb!

Rhubarb season oh how I have missed thee…

Some would view this tart red, green and stalky plant to be ugly and unruly, but for me I look forward to the Rhubarb picking season all winter long.  Rhubarb means there is an excuse to bake with tons, upon tons, of SUGAR! Also- it signifies Summer is here, and that more wonderful garden goodies are yet to come for the summer! I am going to leave you with a  photo of my wonderful, freshly chopped rhubarb, but I promise I will be back with some delicious recipes for this unpopular fruit, or is it a vegetable…hmm…. I will come back with that answer next time too!
