Day 24 of 25 Days of Christmas My Urban Oven Style!

I hope you all are having a fabulous Christmas Eve with your family. The Hubby and I spend Christmas Eve with his family each year.  We eat all day long, open presents, and hang out for the whole day. Christmas Day we spend the day with my side of the family.  Then the day after this year we will be with my dad’s family and then back with The Hubby’s family on Sunday. I love Christmas but it requires a lot of planning.  Making sure we can fit in everyone and every families gathering.  I am pretty sure by Sunday night I am going to crash from all the events.

Every year for Christmas I try to make everyone’s favorites. This year I made my date thumbprint cookies for my mom and sister, molasses cookies for my grandpa and aunt, peanut butter blossoms for me and my SIL, chocolate dipped rice krispie bars for The Hubby, Sour Cream Sugar Cookies for just about everyone in my family, and Caramel Crispix for my  other SIL.

Four Christmases ago, I made Caramel Crispix for my SIL, and she fell in love. She calls it “Cereal Crack”.

The recipe is so easy to make, that it can be thrown together quickly for Christmas, or just a random movie night.

The problem with making this recipe, I always forget the recipe. I call my mom every single time I make this recipe. I even called her today to ask for her to look up the recipe for me again. This is one of the classic recipes that my mom has in her cook book at home folded up on a piece of old oil stained paper. The last time she sent it to me she took a photo and sent it to me. Then told me to save it and stop calling her {in the nicest mom voice possible}.

I didn’t save it. I went into a panic and called my mom 3 times in a row today waiting of her to answer and give me the recipe. She never answered. I had to then try to get my sister to send me the recipe. I finally found the photos she sent me. Thank you mom for being proactive last time. And me not being foresighted enough to save it.

Let’s hope sharing this recipe with you will prevent me from calling my mom and bugging her again. {Let’s hope}.

I am pretty sure the whole batch I just made will be gone by the time we are done watching christmas movies tonight!

Caramel Crispix

  • 1/2 cup salted butter (1 stick)
  • 1/4 cup corn syrup
  • 1 cup brown sugar
  • 1 box Crispix cereal
  1. In a small sauce pan, over medium heat, melt butter.
  2. Pour cereal into a clean brown paper grocery bag.
  3. Add sugar and corn syrup, stir. Bring to a boil.
  4. Boil for 1 minute.
  5. Pour caramel over cereal, and roll bag closed. Shake.
  6. Place bag in microwave and cook for 1 minute. Remove and shake again.
  7. Microwave 2 more times for 1 minute each, shaking between.
  8. Pour Crispix on to a cookie sheet or wax paper to cool.
  9. While cooling, stir cereal several times to prevent from hardening together.
  10. When cooled, store in an air tight container.
