Easy Zucchini Brownies

The other day I was having a conversation with my friend, by friend I mean Dewey, by Dewey I mean my dog.  And we were chatting about the need for more snacks in our house.  He totally agreed with me by barking, and begging for a treat of his own. I am pretty sure he has a bigger stash of snacks and treats than I do in the house.

In the last year, I have really tried my best to eliminate snacks from our house. Processed food for the most part. I have not been 100% successful, but I have made big progress. By eliminating these type of foods from our house, it helps reduce how often we eat them.

The only thing that doesn’t work with that plan– being a baker.  When my cookie craving gets too strong, I bust out hot tamale and blend up a batch of chocolate chip cookies. And when I am in the mood for a good bowl of popcorn, I take out my air popper and butter.  With both of those options, I am cutting out crazy amounts of preservatives. However, all that work normally helps sway me away from eating these type foods.  This is my way of combating the “don’t trust a skinny baker” phrase. Might not be skinny, but trying to get there… God willing!

Remember when it told you zucchini was coming out of my ears?  Yup, still free flowing out of my ears.

At our National Night out a few weeks ago, someone brought a whole case of brownie and cake mixes for everyone to take home. I took a brownie mix home with me thinking it could be put to good use for a blog recipe eventually.

Or a random 11pm craving…. Did I just say that out loud?!

Regardless, I found the perfect use for the brownie mix last week.  Zucchini Brownies!

See what I did there?! Wink, wink, nudge, nudge.

These are the most delicious, chocolaty brownies I have ever made. The addition of zucchini and banana really doesn’t add any flavor, but they do add a ton of moisture.  These bad boys were soft.

Dare I might say ooey gooey?

Then you add in the chocolate chips and you have some chocolate packed brownies my friend.

You better pour yourself a BIG glass of milk for these guys, cause you are going to need it.

Easy Zucchini Brownies

  • 1 box brownie mix (dry (I used Duncan Hines))
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 cup zucchini (grated)
  • 1/4 cup plain greek yogurt
  • 1 ripe banana (mashed)
  • 1/3 cup semi-sweet chocolate chips
  1. In large bowl stir together brownie mix, oil, zucchini, yogurt and banana. Do not over mix.
  2. Stir in chocolate chips. Pour into a 9 x13 greased baking pan.
  3. Bake at 350 for 35 minutes or until center is firm.
  4. Allow to cool and cover overnight for super moist brownies.
