Fruits of Our Labor

Can you believe it? All of those little plants actually produced vegetables. We actually grew food we could bring home and eat!
I know it is not the worlds most amazing accomplishment, but it was a very big one for The Boy. Always being a city kid, growing and eating our own produce was the most amazing thing. He actually grinned ear to ear every time he ate something we grew.  Seriously.
“Mmmm… so good! Wow, we actually grew this,” was a very frequent phrase during dinner 🙂
This year we were just beginners. We planted too many tomatoes, and peppers, not enough onions or mint, and we completely missed out on planting beans, peas, lettuce and potatoes. With that all being said, we had tons of vegetables to harvest, so many we could not even eat them all!
There were cucumbers, and more cucumbers. We could not eat them all nor could I come up with enough recipes to make with all the cucumbers.
Mint grew like crazy! This one was a highlight for The Boy. He adds it to all of his salads.
Oh and the peppers.  We planted 12 pepper plants.
Maybe we were a little overzealous when we planted these. Who seriously can eat that many peppers?  Especially someone like me who doesn’t like spicy food.
I know it sounds silly. Why would someone who doesn’t like spicy food plant 12 pepper plants? Well, lets just overlook that and move on…
See I told you we had cucumbers coming out of our ears!
To be fair the ones on the right are pickling cucumbers, with which I  made Refrigerator Pickles.  Some of those are still in the refrigerator. Lets just say I have sworn off cucumbers for a while.
The produce was just overflowing, and this was only our first round of harvesting from the garden. We had 5-6 times this much throughout the season.
As it turns out, we are good gardeners… or was it the land that was super fertile and the summer was perfectly humid with plenty of rain? I am going to go with, we have green thumbs!
