Let’s kick this off with a nice piping hot cup of Hot Cocoa!
I thought I might take the liberty to twist things up a bit, and make a hot cocoa recipe that didn’t involve any dairy.
Rarely do I make hot cocoa from scratch at home. I drink it so much I like to have good old Swiss Miss in the canister handy to get my quick fixes.
Anyone else have this addiction?
If it is just me, that is ok. I am not ashamed.
Lately I have been feeling like a nice cup of homemade hot cocoa would be the perfect fit for the chilly nights that have hit Minnesota. I created this recipe to both feed my need for chocolate, but also The Hubby’s need for no dairy.
Coconut normally isn’t my first choice of flavors, unless it is in a fruity drink with a straw on a sunny beach somewhere, I will pass. However, I had a can of coconut milk in my pantry, and felt it would help make a great whipped cream to top hot cocoa with. I had seen a few basic recipes for coconut whipped cream, I thought that it was the perfect add to my hot cocoa. With the left over coconut water, why not add it to the hot cocoa? Recipe born.
I am really glad I didn’t have to go out and shovel our side walks tonight from the recent snow. Outdoor chores are for husbands. Right? I think I am fine with the “gender” specific chores, if it means I don’t have to go outside in the cold. I’ll do the ‘girl chores’, like cook a meal or do the dishes any day, but taking out the trash and mowing the grass, those can stay ‘boy chores’.
And if I am in the kitchen, I can have a nice glass of hot cocoa waiting for The Hubby when he comes in from outside. See how that works??
Keep this one up your sleeve the next time snow needs to be shoveled. If you great someone at the door with this cup of cocoa, they will forget that they had to do all the snow removal without you.

Dairy-Free Coconut Hot Cocoa with Coconut Whipped Cream
Cozy up this winter with a dairy-free cup of hot cocoa! Top it off with dollop of cream for an extra treat.
- 2 13.5 oz cans coconut milk
- 2 cups lactose free milk or soy milk
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon cinnamon
- 2-3 tablespoons sugar
- 1 1/2 teaspoons vanilla
- Allow coconut milk to separate by placing in refrigerator for a few hours or over night, until cream is solidified on top. Do not shake.
- Once chilled, skim off cream from the top of the coconut milk, leaving water in can.
- Place cream in a chilled mixing bowl or stand mixer and whip with 1 tablespoon sugar and 1/2 teaspoon vanilla until peaks form. Place in refrigerator to chill.
- In a medium sauce pan, pour in remaining coconut water and bring to a boil.
- Dissolve 1- 2 tablespoons sugar into boiling coconut water.
- Whisk in cocoa powder, vanilla and cinnamon.
- Serve hot in your favorite mug with a dollop of whipped cream on top.
- Remaining whipped cream can be stored in refrigerator for 2-3 days.
