Speedy Sweet Corn

Knee high by the forth of July. Have you ever heard that saying? I am not sure how relevant it is now a days because of all the hybrid seeds used for corn that have it waist high or taller by Independents day, but I still like the saying. Mainly because it reminds me that sweet corn is not far away in July! Now it is September and sweet corn is abundant. YAY!

I love sweet corn; loaded with dripping butter, salt and pepper. Then burning my finger tips as I try to hold it up to my mouth as I gnaw back and forth. I sometimes mimic an antique typewriter and ding out loud at the end of  each row.  {DING!}

Living alone and cooking just for me, it seems silly to take out a large pot, boil water, cook my ear of corn and then have to clean up the mess.  Recently this dilemma all went away.  Microwaved sweet corn!

I would never have thought to do this, but low and behold, it worked.

Peel the outer layer of husk from the corn, not all of it, just the dirty outer layer. Rinse. Place the corn in a 1 gallon zip-lock bag or tightly tied shopping bag.  As you will notice, I opted for the ever so convenient Target shopping bag.

Do you think I should notify the marketing division at Target that they can add a 6th use: Steaming Sweet Corn??

Place the bag in the center of your microwave for 5 mins and watch it balloon. Don’t mind my dirty microwave, it has been cleaned since.

Let stand in your microwave for a minute or two to cool and continue cooking.

Cut open the bag. Beware of hot steam.

There you have it, fresh delicious sweet corn. All ready to be dowsed in butter, salt and pepper goodness!
